When the leaves turn yellow, it seems like pumpkin flavoured foods come out in full-force. Pumpkin-spiced lattes, pumpkin bread, pumpkin pie, even pumpkin beer. And rightfully so! There’s something comforting and warm about pumpkin flavours. So why not keep yourself warm with these pumpkin-inspired recipes?

Pumpkin Pancakes

Ingredients

  • 1 ½ cups milk
  • 1 cup of pumpkin puree (fresh or canned)
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon allspice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt

Directions

  1. In a bowl, mix the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
  2. Heat a lightly oiled frying pan or griddle over medium high heat. Pour or scoop the batter onto griddle, using approximately ¼ cup for each pancake. Brown on both sides.

Pumpkin Loaf

  • 1 can pumpkin puree
  • 4 eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 cups white sugar
  • 3 ½ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground ginger

Directions

  1. Preheat oven to 350 degrees. Grease and flour three 7X3 inch loaf pans
  2. In a large bowl, mix pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
  3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
